While most of us are familiar with the cured Spanish version, the lesser known fresh Mexican iteration is just as wonderful! They’re full of warm spices that tingle the tongue without setting your mouth on fire. Our Chorizo Pork Sausages bring a big hit of flavour (and colour) to any meal!

How it’s made…

Freedom Farms sausages are a careful blend of our pork shoulder, jowls, and selected cuts from our sows, who spend their lives on pasture, developing meat with an incredible, rich flavour.

We use a blend of rice and vegetables to bind the sausages (making them free from gluten and soy – yay!). We then season them with a mix of paprika, chilli, cayenne, coriander, nutmeg and ginger – just enough to add pizzazz without overwhelming the star ingredient, our Freedom Farmed pork. The result? Delightfully tender porky snarlers we think you’re going to love.

The simplest way to cook these sausages is in a pan, over medium heat, until the exteriors are beautifully golden and they are cooked through. Easy peasy.

Ideas full of flavour

We reckon some of the best eating ideas with these sausages give a nod to their Mexican heritage. Traditional Mexican recipes call for the chorizo casing to be removed and the meat crumbled while cooking. Make breakfast tacos with chorizo folded through your scrambled eggs and gently tucked inside a warm tortilla shell. Try cheesy enchiladas with a chorizo and kumara filling – you can also add rice and lots of capsicums to stretch these out.

Add cooked chorizo to your huevos rancheros – a dish of eggs baked in a spicy tomato sauce. Or pair them with prawns in a Mexican green rice dish – a weeknight staple that goes great with BBQ’s summer corn and fresh lime.

Packaging Stewardship

Plastic Tray: Rinse and dry plastic tray and place in your kerbside recycling bin. It is made of recycled PET by Flight Plastics in Lower Hutt, and can be kept in a closed loop.

Plastic film: Carefully remove plastic lid from tray and return to soft plastic recycling bin at your grocery store.
