Our traditional German-inspired sausage… the story goes that chefs kept buckets of water by the grill when cooking Brats… the snags boasted so much fat that spontaneous combustion was a frequent occurrence! We’ve taken a more balanced approach – our sweet and juicy Freedom Farmed pork, carefully blended with traditional spices.

How it’s made…

Freedom Farms sausages are a careful blend of our pork shoulder, jowls, and selected cuts from our sows, who spend their lives on pasture, developing meat with an incredible, rich flavour.

We use a blend of rice flour and vegetables to bind the sausages… making them free from gluten and soy… and then season them with a mix of marjoram, sage, white pepper, mace, caraway and nutmeg – just enough to add pizzazz without overwhelming our star ingredient, our Freedom Farmed pork.

Cooking notes…

The simplest way to cook these sausages is in a pan, over medium heat, until the exteriors are beautifully golden and they are cooked through. No firefighting buckets necessary.

We love to serve Brats the traditional way – with a big slather of sweet mustard pickle, sauerkraut, or potato salad. They work well with a doorstop of crusty bread, too.
