Shoulder bacon is the workhorse of the bacon range – big flavour, tenderness, and many many uses. Pies, soups, pasta and risotto… this is your must-stock bacon and we love it.
How it’s made…
As the name suggests, shoulder bacon is made from Freedom Farmed pork shoulder… one of the most hardworking muscles on the pig. Often marbled with fat, this cut offers a deep, rich flavour.
We use a wet brine to cure – this creates delightfully tender bacon that won’t dry out. All our bacon is also naturally wood smoked… you know, by burning actual wood. No tricky flavours here.

Shoulder bacon is going to go best in your frying pan – cast iron is our fave, but any pan will do the trick. You’re not looking for crisp, but a wee bit of caramelised colour does wonders… 2 to 3 mins on each side over medium temp. Resist the urge to chuck it in a ripping hot pan – you’ll drive all the moisture out and end up with the texture of gumboots.
You can also dice and add to soups, stews or sauces for a big hit of bacon-y flavour. We suggest dicing it up and giving it a sizzle in the pan first to render some of the fat (which you should definitely also add – don’t throw it away!).

to the soft plastics recycling bin at your local grocery store.
With careful management, soft plastic waste can be kept in a closed loop system – plastic from this product can be recycled into fence posts which are utilised on the same farms this product came from.
