Our Pork & Fennel Sausages pack a big Italian-inspired punch… the fennel seeds add a fragrant sweetness, which pairs well with flavours like lemon, apple cider or a zingy NZ chardonnay. This is our favourite kind of comfort eating.

How it’s made…

Freedom Farms sausages are a careful blend of our pork shoulder, jowls, and selected cuts from our sows, who spend their lives on pasture, developing meat with an incredible, rich flavour.

We use a blend of rice flour and vegetables to bind the sausages… making them free from gluten and soy… and then season them with a mix of fennel, sage and parsley – just enough to add pizzazz without overwhelming our star ingredient, our Freedom Farmed pork.

The result? Delightfully tender porky snarlers we think you’re going to love.

Cooking notes…

The simplest way to cook these sausages is in a pan, over medium heat, until the exteriors are beautifully golden and they are cooked through. Easy peasy.

While these sausages are a delight cooked as they are, their flavours make them a very special addition to some old faves: homemade sausage rolls, add it to your spag bol mince, make a simple potato and sausage bake but add capers, white wine, preserved lemon and chives to take it to the next level… or keep it light by serving them in a salad with rocket, fresh pear and heaps of chunky salsa verde. Bellissimo!
